With my newly discovered interest in cooking, I’ve found that all the prep (rinsing, chopping, dicing, mincing…) can actually be pretty therapeutic and mindless (in a good way). It used to be the part of cooking that both intimidated me and bored me the most. So interesting how things can change for us individually in such a short time. PS: The meal of scallops I mentioned in my last post? Success!
